Hot Sausage Skillet Pasta: Easy Peasy Weeknight Meal

I'm a fan of easy meals......like super easy meals. Like half an hour or less and three dirty dishes including plates type easy meals. I mean, seriously, when your husband is home for less than three hours between work and bed-y-bye time, you don't want to spend half that time making dinner. Hello easy-peasy AND cheesy Hot Sausage Skillet Pasta.

This is one easy peasy weeknight meal!

Seriously this took all of 20 minutes to throw together and it tastes yummy. Like cheesy-delicious kind of yummy and this is coming from me. Try it, add your own little pizazz to it, eat it, and love it. Yum.

HOT SAUSAGE SKILLET PASTA

Serves 2

INGREDIENTS:
1 tbsp Olive Oil
2 cloves Minced Garlic
1 Onion, diced
1 pkg Hot & Spicy Kielbasa, sliced thinly (I use the kind without the skin)
2 cups Chicken Broth
1 can Diced Tomatoes
4 tbsp Sriracha Sauce, divided (you can adjust this depending on how hot and spicy you want this to be)
8 oz Macaroni Pasta, uncooked
Salt and Pepper to taste
1 tsp Italian Seasoning or a mix of basil, oregano, and parsley
2 tbsp Butter
2 tbsp Flour
1/2 c Milk
1 c Shredded Cheese, cheddar or pepper jack works best
 
Pasta + Cheezy Hot Sausage Sauce

DIRECTIONS:

1. Heat your olive oil in a large skillet over medium heat. Add the garlic, onion, and sausage and cook. Stir frequently until the sausage is lightly browned, around 3-4 minutes. 
2. Stir in the chicken broth, tomatoes, 2 tbsp sriracha, and pasta. Season with salt, pepper, and Italian seasoning. Bring to a boil, reduce heat and simmer until the pasta is cooked about 12 to 14 minutes. 
3. In another saucepan (ok yeah I lied a little about the one pot thing), melt the butter and whisk in the flour. Once you have your roux going, add the milk and combine. Add the rest of the sriracha sauce and the cheese, stir until the cheese is melted, around 2 minutes. 
4. Add the cheese sauce into your pasta and stir until combined. Serve immediately and enjoy!!!
