Chocolate Chip Cookie a la Mug

When your husband hasn't been home for awhile, you get really munchy. You start craving peanut butter cookies at midnight, Lays potato chips at 3am......and ice cream. Ice cream is high on this whole munchy list. But where exactly do you get ice cream at 3 am. Long story short--in Hawaii pretty much nowhere. 

So you settle for the next best thing. Chocolate chip cookie in a mug. It took me about 7 minutes to whip this up and cook it. Seriously, all of 60 seconds to cook this baby--and it tastes delicious. (It would taste even yummier with ice cream but as I said ice cream at 3am = no go.)  THE perfect sweet midnight snack for a gal and her pup.

Ok, so Duke didn't actually get any of this because, hello dog. But I did....and made my hubs extremely jealous with the picture I texted him. Poor fellow. Anyway, I know by now you desperately want to know how I made this bowl of goodness for one. 


Mine came out a little less fluffy than it was supposed to because I put it in the microwave for an extra 30 seconds because it was gooey and I thought it might not be cooked. Turns out that's actually how it was supposed to be and you-know-who should have read the whole recipe. Let this be a lesson to all of you.
 

Did I mention that all mixing and eating is done right on your mug....or ramekin...or little bitty mixing bowl which is what I used because every time I look at a ramekin Zach gives me this look like why do we need that. As long as you can stick it in a microwave, you're good to go.


And it has chocolate chips......a girl can't ever eat too many chocolate chips. Poor Duke was practically begging me for a bite. What I really love is it's so fast to make. It's like making popcorn except sweet. Yum. Make it. You won't regret it. 
 

CHOCOLATE CHIP COOKIE a la MODE

Ingredients
2 Tbsp Butter, softened
2 Tbsp Sugar
2 Tbsp Brown Sugar, packed
1 Egg, beaten
1/4 tsp Vanilla
5 Tbsp Flour
1/4 tsp Baking Soda
1/4 tsp Salt
1/4 c Chocolate Chips or more because you can't have too many 

Directions
1. Mix the butter and sugars in a ramekin/bowl with a spoon until combined. Add your egg and the vanilla and combine. Then mix in your dry ingredients and stir until combined. Add in your chocolate chips and fold in. 
2. Pop it in the microwave for 60 seconds and remove. It will be hot...so don't take it out and burn your finger like I did. Wait about 30ish seconds so that the gooeyness sets and becomes a cakey consistency. This would be really good with ice cream......I'm getting ice cream tomorrow just so I can make this again and top it with ice cream. 
That's it!! Voila! You serve it and eat it and you thank me ten times over for introducing you to this delicious mug cookie for one.
