The Perfect Hot Cocoa for Two

I don't know about you but there's nothing that feels more Christmas-y to me than sipping hot cocoa by the tree. When I was a kid, it was a tradition in my house to have hot chocolate (with extra extra marshmallows) while opening up our presents and I've loved carrying on that tradition with Zach. 

The past few years I've taken the easy route and whipped up a few mugs from hot chocolate packets but this year I thought I'd try something a little more adventurous. Making my own hot cocoa from scratch!!

Now if you're like my hubby, you can forego the eggnog whipped cream for just regular whipped cream or marshmallows but I love the extra flavor it adds to the hot chocolate. 

Hot Cocoa for Two
Makes 2 cups

2 1/2 cups milk (I used 1/2 half and half and 1/2 milk)
3 Tbsp granulated sugar
1 1/2 Tbsp unsweetened cocoa
2 Tbsp chocolate nibs, melted 
1/4 tsp vanilla extract

For the Eggnog Whipped Cream
2 Tbsp eggnog
1/4 cup whipping cream
2 Tbsp sugar 

To make the hot cocoa: In a medium saucepan, heat the milk over medium high heat just until scalding. Whisk in the sugar, cocoa, vanilla, and melted chocolate nibs until combined. 

To make the eggnog whipped cream: Add the sugar into your whipped cream and beat on high until white peaks begin to form. Add the eggnog and beat for about one more minute until combined and stiff. Serve cocoa hot topped with eggnog cream and a sprinkle of cinnamon and enjoy!!!
