Behind the Blog {Holiday Edition}

Today I have a special treat for y'all--the hubby is visiting the blog today!!! Yep, that's right it's time to wrangle your man and ask him those 5 simple questions we look forward to each month. 1. What is your favorite cereal?  Captain Crunch (he also really loves Lucky Charms--oh wait that's me--and Cinnamon Toast Crunch) 2. Pancakes or waffles?  Probably waffles (I guess this girl is going to have to get a waffle maker sometime soon) 3. What is your favorite holiday tradition?  Uhhhhmm........I pretty much love every part of Christmas. We've started buying a tree ornament every Christmas with the year inscribed--so far that's our only 'real' tradition.  4. Finish the sentence: All I want for Christmas is...  a motorcycle.  5. What was your best moment of 2013?  Hmmmm (super long pause) probably all those early mornings at the beach we've spent, swimming and just enjoying life with my lovely wife. (At first when he said this I was all like 'aww' that's so sweet, but then I realized that by 'swimming' he actually means watching his lovely wife get bruised and battered by the waves....hmmmm)

If you've read my blog before, you know that I love to cook and I'm always trying out new recipes. Most of the recipes I try actually become my current go-to meal and then of course there's cowboy casserole and shepherd's pie that I make on a regular basis.

But there is one recipe that I always find myself turning to when I want something simple, fast, and easy--tater tot casserole. I requires a grand total of three ingredients and all of those are things I pretty much always have on hand so if you're looking for something really easy and really yummy, this is the recipe for you. Easy Tater Tot Casserole What you need: 4-1/2 c tater tots 1 lb hamburger 1 can cream of mushroom soup 1 c frozen corn or peas (optional) salt and pepper to taste What to do: 1. Preheat your oven to 375 degrees. Layer the bottom of an 8x10 casserole dish with about 2 cups of tater tots. Set aside. 2. Brown your meat, adding salt and pepper to taste. Add the entire can of cream of mushroom soup and mix well. I like to add a few dashes of soy sauce just to add a little bit more salt. This is also where you'd add your vegetable. Make sure everything is evenly mixed in.  3. Layer your meat mixture on top of your tater tot layer in the casserole dish. Add an even layer of tater tots on top of your meat layer (this is about another 2 cups). 4. Bake in the oven for 20 to 30 minutes until top layer of tater tots is golden brown. Enjoy!!!
